Green Beans with Bacon

A meal is incomplete without a vegetable. Color and necessary nutrients are both important, but so is taste. Our green bean with bacon recipe, which we call "Green Bean Baconini" goes well with many dishes, but we have chosen it to accompany the main course in our from him to her menu. This side dish distinguishes itself alongside a shrimp pasta dish.

Ingredients:
1/4 pound of bacon
1 pound fresh green beans
1 medium onion
dash pepper
1 clove garlic
dash salt to taste

Directions:
In a ridged pan cook bacon in oven at 375° F (190° C) for ten minutes. Turn bacon and continue to cook for eight to ten more minutes or until bacon begins to become crisp. Remove from oven and reserve 2 tablespoons of the bacon grease.

Clean and snap green beans in half. Boil the beans for about five minutes, until slightly soft, but still a bit crunchy. Strain beans. Chop onion and bacon into coarse chunks. In a cast-iron skillet over medium heat coat the bottom of the pan with reserved bacon grease. Place garlic and onion and fry for about two minutes, add green beans, bacon, salt and pepper. Turn several times with a spatula while lightly frying for three to five minutes. Don't worry about a serving dish, a cast-iron skillet looks good on a hot-pad on the table. Or simply place servings on individual plates alongside main course.
