*Tapioca Pudding*
The kids think it is gloppy, but its vanilla taste and interesting texture make for a dessert that gets notice. This is an old-timey pudding that is fun and excites comment
Ingredients
1/2 cup sugar
1/4 cup quick cooking tapioca
1/4 teaspoon salt
4 cups milk
3 egg yokes (beaten slightly)
1 1/2 teaspoons vanilla
3 egg whites (beaten unmercifully)
Put sugar, salt, tapioca and milk in a saucepan. Turn on medium-high heat. Stir in egg yokes. Bring to a vigorous boil while stirring constantly. Now remove from heat and add in vanilla. Let mixture sit while beating egg whites into puffy white peaks. In a clean serving bowl, pour in pudding mixture, then slide in the beaten egg whites, folding them into pudding. Cover with plastic stretch wrap and refrigerate. This makes 8 to 10 servings.
