*Thanksgiving Turkey Gravy*

Smothering mashed potatoes in a luscious gravy is the way to top off the perfect Thanksgiving Day meal. Gravy can also be poured over meat. It is prized as a left-over, mixed with chunked turkey and poured over some drop-biscuits it makes a satisfying lunch.

Ingredients
Drippings from Roast Turkey
2 1/2 cups water
1/4 cup corn starch
salt and pepper to taste

When your Thanksgiving turkey has finished roasting and dinner is soon to be served, remove the turkey from the roasting pan and pour off all the drippings into a sauce pan. Spoon off one-half to 3/4 of the fat. Discard the fat. Now, place saucepan over medium-high heat and add 2 cups of water. Add salt and pepper to taste.

Spoon 1/4 cup corn starch into measuring cup, add remaining 1/2 cup of water and stir until thoroughly mixed. When broth in saucepan begins to boil, slowly pour in corn starch while stirring. It should thicken quickly. Remove from heat and serve in gravy-boat (or a gravy-ship depending on quantity). If gravy is too thick, add water, too thin then add more corn starch.
