Roast Potatoes

As Harry Potter "helped himself" to the roast potatoes, we can assume that they were prepared in a style common in England. Across the pond they might be called broasted potatoes. This involves a bit more work than baked or mashed potatoes, but the results are well worth it.

Ingredients:
3 pounds potatoes
5 tablespoons olive oil
dash garlic powder
dash black pepper
dash red pepper
1 cup grated cheese

Instructions:
Clean potatoes and peel (or don't peel, depending on your preferences). Cut into one inch chunks and wedges. Place potatoes in boiling pot and cover with water. Bring water to boil for about ten minutes. Now dump off water, cover pan and shake up potatoes in the pan. This roughs up the outside and will help the potatoes to be crispier when they are roasted.

In a large Pyrex baking dish spill out potatoes. Spread them evenly over the bottom of dish. Pour oil over the top and toss - to completely coat the potatoes. Sprinkle on garlic, black pepper and red pepper. Put potatoes into 400 degree oven for about an hour or until potatoes are tender (may be longer or shorter depending on size of potatoes). Sprinkle cheese on top of potatoes and put them back in oven for about 5 more minutes. Remove from oven and serve from cooking dish with a spatula.
