Filled Pumpkin Cookies

You know the kiddies are going to make out like bandits when it comes to trick-or-treating, so you don't need to over-do the dessert for this meal. A couple nice pumpkin cookies might be just the right thing.

1 cup butter
1 cup sugar
1 large egg
1 teaspoon vanilla
2 teaspoons baking powder
1 tablespoon pumpkin pie spice
2 3/4 cups four
orange food coloring
2 cups raisins
1 cup chopped walnuts
1/2 cup thawed frozen orange juice

In large bowl blend butter, sugar, egg, vanilla, baking powder and pumpkin pie spice. Slowly stir in flour (about 1/2 cup at a time) to ensure thorough mixing. Add in food-coloring to make a light orange dough. Separate dough into two equal halves.

Roll out both balls of dough to about 1/4 inch. Using a pumpkin shaped cookie cutter, cut out pumpkins. Place half on cookie sheet.

Mix raisins, walnuts and orange juice to make filling. Dollop filling onto shapes on cookie sheets. Cut out little eyes and noses on other half of pumpkin cookies. Place them on top of filling and lightly pinch edges.

Bake in 375 degree oven for 12 to 15 minutes.
