Halloween Corn Muffins

If you prefer to make corn muffins from scratch you can check out our 4th of July Corn Muffin Recipe. But if you are pressed for time getting trick-or-treaters ready to go, this quick recipe will not only taste great but look like you ground the corn yourself! This recipe makes about 16 muffins.

Ingredients:
2 boxes of Jiffy Corn Muffin Mix (8 1/2 ounces each)
1 small green pepper (1/4 cup diced)
1 small red pepper (1/4 cup diced)
1/2 cup shredded cheddar cheese

Instructions:
Prepare Jiffy mix as per recipe on box, you can substitute the milk with water. Dice the peppers fairly small and add to the mix. Spoon mix into 16 muffin cups in a muffin pan. Sprinkle cheese on top of uncooked muffins. Bake as per directions, with the understanding that you may have to cook the muffins a bit longer due to the peppers.
