Candied Apples
Candied apples are a luscious treat. They mix the best of the harvest with the sweet taste of candy and cinnamon. These are a Halloween tradition to pass on to your own children and grandchildren.
Ingredients:
6 medium sized apples
2 cups corn syrup
2 cups granulated sugar
1 cup water
1/3 cup cinnamon candy
1 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon cloves
Red Food Coloring
6 Popsicle sticks
Instructions:
Wash apples and remove stems. Insert Popsicle sticks on stem side of apples about half-way through.
Combine sugar, corn syrup, cinnamon candies, and water in medium-sized saucepan over medium heat. Stir constantly until candies dissolve - making sure not to let mixture come to a boil at this stage. Now add spices and food coloring to make mixture a bright red, redolent of cinnamon. Turn up the heat to medium high. Place a candy thermometer into mixture, now you must bring it to 300 degrees, (at which point it will boil - you can stop stirring about here, by the way).
As soon as 300 degrees is reached, remove candy from stove and quickly dip apples, thoroughly coating them. Place each one, stick side up, on a greased pan. Serve when candy cools.
