Beef in a Costume

This unusual recipe brings together traditional ingredients in a new way that is not only pleasing to the eye and palate, but will have your guests marvelling at your ingenuity. This recipe will make eight servings.

2 medium sized acorn squash
1 pound hamburger
2 eggs
1 cup bread crumbs
3 cloves garlic crushed
1 teaspoon black pepper
1 large onion diced
1 small green pepper diced
1 teaspoon parsley
1 dash oregano
1 eight ounce can of tomato sauce

Halve the acorn squash. Be careful how you do this as they tend to be hard to push a knife through. Scoop out seeds and turn upside down on a plate. Put into microwave for about 5 minutes or until the yellow pulp is becoming soft. Now quarter the halves and set aside. Set oven at 375 degrees. In a large mixing bowl mix all the ingredients holding out only half the tomato sauce.

Form the meat into football shapes and place on top of the squash quarters. Drizzle remaining tomato sauce on top of meat. Place the beef in costume on cooking sheet and bake for one to one and a half hours or until meat is cooked through. Serve hot.
