*Baked Asparagus*
1 bundle of asparagus (1-2 lbs)
1/2 cup shredded Swiss or Mozzarella cheese
Cut the asparagus into 1 to 2 inch lengths. This can be done by holding entire bundle to the cutting board with one hand and making transverse cuts with a long knife. (Cutting could take a long time if you do one stalk at a time).
Lay asparagus on the bottom of a baking dish. Sprinkle cheese over top. Place in 375 degree oven for about 1/2 hour or until asparagus is tender.
When cooking a meal, everything is timing. You want to have all of the food done and hot at the same time. Get something done too early and it gets cold or over-done. Get a dish done too late and it is not served at all or keeps everyone waiting. Generally, you will want to start meat dishes and entre's first because they take longest; then the starch dish (potatoes, rice or pasta); and finally the vegetable.
It is generally advisable to limit the number of dishes provided in a holiday meal. Too many can clutter a table and will also add to your timing problems.
