Zucchini or is it Zucchinini?
What is it about the names of vegetables that there spelling and pronounciation creates so many problems? There are TomAtoes and Tomaatoes. There is broccollini, then there is Zucchini. How could anyone ever remember that extra C without a spell-checker? Well zucchini lovers can and do remember it. Just the way you will remember this recipe when you try it out.

Just thought we'd give you a simple, DELICIOUS zucchini recipe that we use all of the time in the summer. Just get one of those beautiful zucchinis (we like to grow the golden variety), slice it up to cover the bottom of a baking dish. Open up a can of italian-style chopped, stewed tomatoes (or use Mexican or other flavored varieties) and pour over the zucchini. Next take an 8-oz. pkg. of shredded cheese (cheddar, jack, mozzarella, whatever you like best) and sprinkle all over the zucchini-tomato mixture. Put in a 375 degree oven for about 30 minutes and you've got a YUMMY meal. It's our favorite. Maybe your wife would like it... Especially if you use golden she might not even know it's zucchini...
