Indian Chicken

This recipe was graciously contributed by Eva Elk. I suspect we may have to change the name of Indian Chicken to Native-American chicken, unless we can somehow establish that it came from the actual country of India.

I have no idea where this recipe gets its name but somehow people around here call it "Indian chicken". Take the whole chicken or parts thereof, clean out if needed and then simply rub it down with a mixture of olive oil and a nice amount of garlic. Add lemon juice sometimes when I feel like it to cut down on the oil. Take Kosher salt and put it all around the sides of the roasting pan. In a thickish mound. Pop the chicken, breast down or the parts thereof in the middle of the salt and pop into hot oven. How long it takes surely depends on the oven.

Delicious and very simple. And no spices are added what so ever.
