Blueberry Crumble
If you are looking for patriotic colors and good taste, this is the dish for you. While other dishes must strain to get the red-white-and-blue motif, Blueberry crumble reaches it with ease and a combination of flavors that will delight your guests.
Ingredients:
6 cups blueberries
1 tablespoon lemon juice
4 tablespoons tapioca
1 cup rolled oats
1 cup brown sugar
1/2 cup flour
1 teaspoon cinnamon
1/2 cup butter
1 cup crushed walnuts or pecans
12 Maracino cherries
1/2 gallon ice cream
Instructions:
In a large bowl mix blueberries, tapioca and lemon juice. Set this aside while you grease a 13 inch baking dish. Now mix remaining ingredients in a separate dish while cutting in butter until you have course crumbs. Pour blueberries into pan and then sprinkle the dry mixture over the top. Place this in a 350 degree oven for 40 to 45 minutes.
You can serve this hot from the oven or cooled. In either case put on a scoop of icecream with a maracino cherry on top. When your guests dig in be sure to point out the patriotic colors. If they ask about the brown crumble topping, you can tell them it represents the buff facing on the uniforms of the colonial army. This a fun and patriotic treat.
